In a container, mix the yeast with the water and add 3 tablespoons of sugar. Let it rest for at least 10 minutes.

Separately mix the flaxseed with 3 tablespoons of water and let it rest for about 15 minutes. Then liquefy with a little more water.

In a bowl, add half the flour, salt, yeast, oil, milk and beat. Gradually add the sugar, the vanilla essence, the lemon zest, and the rest of the flour. Beat until there is a uniform mass. Cover it and let it rest for 2 hours to let it rise.

With a stick, spread the dough on a flat surface with a little oil -so that the dough does not stick-. Let it extend to a thickness of 1 inch wide. Take a round pan with about 3 inches in diameter and start making the donuts. Then another round mold of approximately 1 cm is taken and the center of the donut is pierced. They are placed on a tray and put in the oven for approximately 15 minutes.
